NUIT SPRING SALAD WITH CREAMY FETA DRESSING

This salad combines blue and white vegetables with the fresh, star-shaped blue borage flower that adds a slight cucumber flavor. Add the creamy feta dressing and enjoy.

Salad Ingredients:
4 cups baby spring lettuce, torn into bite-size pieces
2 cups red cabbage, thinly sliced
2 cups Belgium white endive, chopped
2 cups white mushrooms, thinly sliced
½ cup sliced almonds
½ cup canned white hominy, drained and rinsed
¼ cup dark raisins
½ teaspoon baking soda
12 fresh blue borage flowers

Dressing Ingredients:
1 cup olive oil
¼ cup apple cider vinegar
¼ cup lemon juice
½ cup sour cream
4 ounces aged feta cheese, crumbled
1 tablespoon dried oregano
2 teaspoons dried basil
1 teaspoons sugar
½ teaspoon sea salt
¼ teaspoon white pepper

Directions:
Dissolve ½ teaspoon of baking soda in a large bowl of water and soak the sliced cabbage for 20 minutes. This kitchen magic turns the cabbage blue, a fun addition to honor Nuit. Chop the endive and mix it with the drained cabbage, lettuce, hominy, mushrooms, almonds, and raisins in a serving bowl. Sprinkle the borage flowers over the greens on the top of the salad. Make the salad dressing by placing in a blender the oil, sour cream, vinegar, lemon juice, feta cheese, oregano, basil, sugar, salt, and pepper. Whir until smooth, and chill until ready to serve.

Correspondences:
The lemon juice, sour cream, lettuce, red cabbage, and white mushrooms are all of water. Aged feta cheese is of earth, and baking soda is air of earth. Almonds, borage flowers, oregano, and sugar are all of air, and apple cider vinegar is fire of water of air. Basil, Belgium white endive, and raisins are air of fire, hominy is water of fire, and olive oil is of fire.
